Ingredients:
- For the Pancake Batter:
- 1 ½ cups all-purpose flour
- 3 tablespoons maca powder
- 2 tablespoons chicory root syrup (or adjust to taste)
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 ½ cups milk (dairy or non-dairy)
- 2 large ripe bananas, mashed
- 2 large eggs
- 4 tablespoons melted butter or coconut oil (plus more for cooking)
- For Toppings:
- Sliced bananas
- Chopped walnuts or pecans
- A sprinkle of cinnamon (optional)
Prepare the Batter
In a large mixing bowl, whisk together the flour, maca powder, chicory root syrup, baking powder, baking soda, and salt until well combined.
Mix Wet Ingredients
In another bowl, mix the milk, mashed bananas, eggs, and melted butter (or coconut oil) until smooth.
Combine
Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; a few lumps are okay.
Heat the Pan
Preheat a non-stick skillet or griddle over medium heat. Add a small amount of butter or oil to coat the surface.
Cook the Pancakes
Pour about 1/4 cup of batter for each pancake onto the hot skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for an additional 1-2 minutes until golden brown. Repeat with the remaining batter, adding more butter or oil as needed.
Serve
Stack the pancakes on plates and serve warm. Top with sliced bananas, chopped walnuts or pecans, and a sprinkle of cinnamon if desired.
