Irish Cacao Nib Brownie Bites (Sugar-Free)
These decadent brownie bites are a healthier twist on a classic Irish dessert. With rich cacao powder and a cheeky splash of Irish whiskey (for those health benefits, of course), they’re fudgy, flavorful, and perfect for a post-dinner treat or special occasion—now made without sugar!


Ingredients:
- 1 cup almond flour
- 1/2 cup chicory root syrup (adjust to taste)
- 1/4 cup cacao powder
- 1/4 teaspoon salt
- 1/4 cup melted coconut oil
- 1/4 cup maple syrup (or reduce to 2 tablespoons if desired, for less sweetness)
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup Irish whiskey (optional)
- 1/4 cup cacao nibs
Preheat Oven
Combine Dry Ingredients
Mix Wet Ingredients
Combine Mixtures
Fold in Cacao Nibs
Fill Muffin Tin
Bake
Cool
Preheat Oven
Preheat your oven to 350°F (175°C) and grease a mini muffin tin.
Combine Dry Ingredients
In a medium bowl, whisk together the almond flour, cacao powder, and salt.
Mix Wet Ingredients
In a separate bowl, whisk together the melted coconut oil, chicory root syrup, maple syrup (if using), egg, vanilla extract, and Irish whiskey (if using).
Combine Mixtures
Pour the wet ingredients into the dry ingredients and stir until well combined.
Fold in Cacao Nibs
Gently fold in the cacao nibs until evenly distributed.
Fill Muffin Tin
Divide the batter evenly among the cups of the greased muffin tin.
Bake
Bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean.
Cool
Allow the brownie bites to cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
