Goji Berry and Oat Breakfast Bowl

This hearty breakfast bowl is packed with nutrients and flavor. The creamy oats are topped with a sweet and tangy goji berry compote, crunchy nuts, and a drizzle of honey. It's a perfect way to start your day, especially during the chilly winter months.

Ingredients:
  • 1 cup rolled oats
  • 2 cups milk (or your preferred milk alternative)
  • 1/4 cup goji berries
  • 1 tablespoon maple syrup
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup chopped walnuts or almonds
  • 1 tablespoon honey (optional)
Prepare the oats
In a small saucepan, combine oats, milk, maple syrup, and cinnamon. Bring to a simmer over medium heat. Reduce heat and let simmer for 5-7 minutes, or until oats are tender.
Make the compote
While the oats are cooking, combine goji berries and 1 tablespoon of maple syrup in a small bowl. Let sit for 5 minutes, or until the berries are softened. Assemble the bowls: Divide the cooked oats evenly among four bowls. Top with goji berry compote, chopped nuts, and a drizzle of honey (if desired). Serve immediately.
Tip
