  • 1 teaspoon vanilla extract
  • For the Berry Compote:
  • 2 cups mixed berries (fresh or frozen)
  • 2 tablespoons chicory root syrup (or adjust to taste)
  • 1 teaspoon lemon juice
  • A pinch of cinnamon (optional)
Prepare the Berry Compote
In a small saucepan over medium heat, combine the mixed berries, chicory root syrup, lemon juice, and a pinch of cinnamon if using. Cook for about 5-7 minutes, stirring occasionally, until the berries have softened and released their juices. Remove from heat and set aside.
Mix Dry Ingredients
In a large mixing bowl, whisk together the whole wheat flour, pea protein powder, chicory root syrup, baking powder, baking soda, salt, and cinnamon until well combined
