Ingredients

  • 1 Large Avocado (mashed)
  • 200g Cucumber (chopped)
  • 60g Coconut yoghurt
  • 1 tsp. NUA Naturals Supergreens+
  • 750ml Water
  • 60ml Lemon Juice
  • Handful of Parsley leaves, chopped
  • Handful of Mint leaves, chopped
  • 1 clove of Garlic (chopped)
  • 1 tsp. Ginger
  • ½ tsp. Turmeric
  • Pinch of Himalayan salt

Instructions

  • Using a food processor, blend all the ingredients together until smooth and creamy.
  • Adjust spices if desired, and serve chilled.
  • Refrigerated and covered, soup will last 3-4 days
  • Serves 3-4
