Cacao & Coconut Energy Balls
- Soak the dates and Goji Berries separately and drain after 30 minutes.
- Put all ingredients (except the coconut) into a food processor and blend until it is a dough-like consistency.
- If the mix is too wet, add more Cacao Powder. If too dry, add more banana.
- Form into balls and roll them in shredded coconut
- These will keep in the fridge for a couple weeks – you may also freeze them!
