Ingredients:
  • For the Pancakes:
  • 1 cup whole wheat flour
  • 1 tablespoon kids' chocolate protein powder
  • 2 tablespoons chicory root extract (or adjust to taste)
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup milk (dairy or non-dairy)
  • 2 large eggs
  • 2 tablespoons melted coconut oil or butter (plus more for cooking)
  • 1 teaspoon vanilla extract
  • For Toppings:
  • Fresh fruit (sliced bananas or berries)
  • Chopped nuts (optional)
Mix Dry Ingredients
In a large mixing bowl, whisk together the whole wheat flour, chocolate protein powder, chicory root extract, baking powder, and salt until well combined.
Mix Wet Ingredients
In another bowl, whisk together the milk, eggs, melted coconut oil (or butter), and vanilla extract until smooth.
Combine the Mixtures
Pour the wet ingredients into the dry mixture and stir gently until just combined. Be careful not to overmix; a few lumps are okay.
Heat the Pan
Preheat a non-stick skillet or griddle over medium heat. Add a small amount of coconut oil or butter to coat the surface.
Cook the Pancakes
